- 1/4 head napa cabbage
Meat
- 🍗 2 large chicken thighs
Seasoning
- 🧂 1 tsp salt
- to taste coarse black pepper
- as needed salad oil
- 2 tbsp sake
- 2 tbsp sesame oil
- 2 dried red chilies
Marinade
- 2 slices julienned ginger
- 1/2 cup vinegar
- 2 tbsp soy sauce
- 🍬 4 tbsp sugar
ÉTAPES
Cut napa cabbage into 1 cm wide strips and massage with 1 tsp salt in a bowl. Let sit for 5 minutes.
Trim excess fat from chicken thighs and make shallow cuts in the meat.
Heat salad oil in a frying pan over medium heat. Place chicken skin-side down and cook until browned, removing excess fat with paper towels. Add sake, cover, and steam on low heat for 3–4 minutes. Reserve the chicken juices.
Mix marinade ingredients (ginger, vinegar, soy sauce, sugar) in a bowl.
Combine napa cabbage, reserved chicken juices, marinade, and 1 tbsp hot sesame oil in a bowl. Mix well.
Slice chicken into bite-sized pieces and plate. Top with marinated cabbage, garnish with dried chilies, and drizzle with 1 tbsp hot sesame oil. Sprinkle coarse black pepper as desired.
