Scallion Mayo
- 🧅 8 cm minced scallion
- 1 tbsp miso
- 2 tbsp mayonnaise
- 1 tsp mirin
- 🧂 A pinch of pepper
ÉTAPES
Mince the scallion. Cut the cabbage into 3 cm squares and slice the carrot into thin wedges.
Mix the scallion, miso, mayonnaise, mirin, and pepper in a bowl to create the scallion mayo.
Place cabbage and carrot on aluminum foil, lay the cod fillets on top, and spread the scallion mayo evenly over the fish. Bake in a toaster oven for 12–15 minutes until the mayo is golden and the cod is cooked through.
