- 🍗 3 pieces chicken thigh
- 🧅 1 stalk green onion
- 🍜 2 packs udon noodles
- 2 tbsp cooking oil
- 2 tbsp mirin
- 🍬 1/2 tbsp sugar
- 🧂 Pinch of salt
- Pinch of pepper
Broth Ingredients
- 💧 1.2L water
- 🐟 1 handful anchovy
- 7-8 pieces kombu
- 1 handful bonito flakes
- 4 tbsp tsuyu or soy sauce
ÉTAPES
Boil water with anchovy and kombu in a pot. Remove kombu after 1 minute of boiling.
Turn off the heat, add bonito flakes, and strain the broth.
Slice green onion diagonally into large pieces.
Cut chicken thigh into bite-sized pieces and marinate with mirin, pepper, and salt.
Heat cooking oil in a pan and grill green onion until browned.
Add chicken thigh to the pan and grill until browned and slightly charred.
Add sugar and stir for 10 seconds.
Pour the strained broth into the pan and bring to a boil.
Add tsuyu or soy sauce to taste.
Add cooked udon noodles to the broth and simmer for 1 minute.
