- 🐟 8 small horse mackerels

- 2 ume plums
- 2 tsp sake

- 2 shiso leaves

- Breadcrumbs as needed
ÉTAPES
Remove the pits from ume plums and finely chop them. Cut shiso leaves into quarters.
Prepare the horse mackerels by removing guts, gills, and scales. Open them by sliding your thumb along the backbone. Wash and pat dry.
Mix the chopped ume plums with sake in a bowl to create ume paste.
Spread 1/8 of the ume paste on each opened mackerel, place a piece of shiso leaf, and fold. Coat with flour, beaten egg, and breadcrumbs in order.
Heat salad oil in a frying pan over medium heat. Fry the mackerels for 4 minutes until golden brown, then flip and cook for another 3 minutes.
