INGRÉDIENTS
Fish
- 220g sanma fillets
Vegetables
- 4 shiitake mushrooms
- 1/2 long green onion
Seasoning
- 1/2 tbsp potato starch
- 1/2 tbsp salad oil
Sauce
- 1 tbsp mirin
- 3 tbsp ponzu soy sauce
- 100ml water
ÉTAPES
Cut the shiitake mushrooms in half vertically and slice the green onion into 3cm pieces.
Cut the sanma into bite-sized pieces and coat with potato starch.
Mix the sauce ingredients (mirin, ponzu soy sauce, water) in a microwave-safe container, cover loosely with plastic wrap, and heat in a 600W microwave for 1 minute.
Heat a frying pan over medium heat, add the shiitake mushrooms and green onion, and cook until browned. Remove and soak in the prepared sauce while hot.
Add salad oil to the frying pan, place the sanma skin-side down, and cook over medium heat for 4–5 minutes until both sides are browned. Transfer to the sauce while hot.
