INGRÉDIENTS
Main Ingredients
- 🐟 4 sardines, cleaned (360g)
- 🍅 1 tomato, sliced
- 🧂 Pinch of salt and pepper
- 1 tbsp olive oil for cooking
Herb Mixture
- 2 tbsp breadcrumbs
- 🧀 1 tbsp grated cheese
- 1 tsp chopped parsley
- 🧂 Pinch of salt
- Pinch of pepper
Finishing Touch
- 1 tbsp olive oil for finishing
ÉTAPES
Slice the tomato into 1cm slices. Mix all herb mixture ingredients in a bowl.
Pat the sardines dry with kitchen paper. Remove the backbone by pulling it out gently and trim the belly bones. Season with salt and pepper.
Heat olive oil in a pan over medium heat. Cook the sardines skin-side down for 2 minutes, then flip and cook for 1 minute.
Arrange tomato slices in a heatproof dish, place sardines on top, sprinkle with herb mixture, and drizzle olive oil. Cover with foil and bake in a toaster oven for 10 minutes until golden brown.
