Fish
- 🐟 2 slices yellowtail
- 🧂 Pinch of salt and pepper
- Enough flour for coating
- 🥚 1 beaten egg
- Enough olive oil for drizzling
Herb Breadcrumbs
- 🧄 1/2 clove minced garlic
- 4 tbsp breadcrumbs
- 1 tbsp dried parsley
- 1 tbsp grated cheese
Tomato Sauce
- 🍅 1 diced tomato
- 1 tbsp olive oil
- 🧂 1/4 tsp salt
- Pinch of pepper
ÉTAPES
Season the yellowtail slices with salt and pepper. Mince the garlic.
Mix the herb breadcrumb ingredients (garlic, breadcrumbs, parsley, cheese) in a bowl.
Coat the yellowtail slices in flour, then beaten egg, and finally the herb breadcrumb mixture. Place on a foil-lined baking tray and drizzle with olive oil.
Cover with foil and bake in a toaster oven for 10 minutes until golden brown.
Dice the tomato into small pieces. Mix the tomato sauce ingredients (tomato, olive oil, salt, pepper) in a microwave-safe container, cover loosely, and microwave at 600W for 1 minute.
Plate the baked yellowtail and top with the tomato sauce.
