Fish
- 🐟 2 pieces soft dried herring
Seaweed
- 8 pieces 20cm kombu
Vegetable
- 8 pieces 20cm kampyo
Liquid
- 💧 1000cc water for soaking kombu
- 💧 Enough water for soaking kampyo
Seasoning
- 🧂 A pinch of salt
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 3 tbsp sugar
- 🧂 2 tbsp soy sauce
- 💧 All kombu soaking water
ÉTAPES
Soak kombu in 1000cc water for 10 minutes to soften.
Soak kampyo in water with a pinch of salt for 3 minutes to soften.
Cut herring into quarters, removing gills and belly bones.
Boil herring in hot water for 2 minutes, then drain.
Wrap herring pieces with kombu and tie with kampyo in 4 places. Make 2 rolls.
Add all seasoning ingredients to a pot, place rolls inside, and heat on medium. Once boiling, reduce heat, cover, and simmer for 30 minutes, adding water as needed.
