    • 🧂 2 tsp soy sauce
    • 3 tbsp shiitake soaking liquid
  • Sesame Mayo Mix

    • 🥚 3 tbsp mayonnaise
    • 🌰 1 tbsp ground white sesame

Soak the dried shiitake in warm water for 15 minutes. Squeeze lightly to remove excess water and reserve 3 tbsp of the soaking liquid. Slice the cap and stem thinly.

Rehydrate the hijiki in water according to package instructions. Drain thoroughly.

Heat salad oil in a pan over medium heat. Add shiitake, hijiki, and tuna. Stir-fry for 2 minutes. Add the seasonings (sake, mirin, sugar, soy sauce, and shiitake broth), mix well, and bring to a boil. Cover and simmer on low heat for 5 minutes. Remove the lid and cook over medium heat until the liquid evaporates. Transfer to a bowl and let cool.

Mix the cooled ingredients with mayonnaise and ground sesame in a bowl.
