INGRÉDIENTS
Fish
- 1 dried hokke fillet (300g)
Vegetables
- 1 pack bok choy (200g)
- 10cm green onion, sliced
- 1 piece minced ginger
Oil
- 1 tbsp sesame oil
Seasoning
- 1 tbsp sake
- 1 tsp soy sauce
- 1 tbsp oyster sauce
- Pinch of pepper
ÉTAPES
Separate bok choy leaves and stems. Cut leaves into 4cm pieces and stems into smaller sections. Slice green onion diagonally and mince ginger.
Place dried hokke fillet skin-side down in a pan over medium heat. Cook for 2–3 minutes until browned. Flip and cover, cooking on low-medium heat for 3–4 minutes until fully cooked. Remove bones and skin, then flake the fish into large pieces.
Heat sesame oil and ginger in the same pan over low heat until fragrant. Add bok choy stems and stir-fry over medium heat until softened.
Add flaked hokke, bok choy leaves, and green onion to the pan. Stir-fry briefly until coated with oil. Add seasoning ingredients and mix well.
