Trim excess fat from chicken thighs and cut into bite-sized pieces. Place chicken in a bowl and mix with sake, salt, pepper, and grated garlic until well-coated.

Combine all-purpose flour and rice flour in a plastic bag. Add the chicken pieces and shake to coat evenly.

Heat vegetable oil to 170°C in a pot, about 2cm deep. Fry the chicken pieces for 4-5 minutes, turning occasionally, until cooked through.

In a frying pan, melt butter over low heat. Add honey and grated garlic, and simmer until the sauce thickens. Toss the fried chicken in the sauce until well-coated.
