Fish
- 🐟 140g horse mackerel fillets
Vegetables
- 🧅 1/3 stalk green onion
- 1 piece ginger
- 12 shiso leaves
- 🍋 1/6 lemon
Cooking Oil
- As needed salad oil
Batter
- 3 tbsp potato starch
- 🥚 1 beaten egg
- 🧂 2 tsp soy sauce
- 🧂 1/3 tsp salt
- 🧂 A pinch of pepper
ÉTAPES
Finely chop the green onion and ginger.
Cut the horse mackerel fillets into thin strips.
In a bowl, mix the batter ingredients (potato starch, beaten egg, soy sauce, salt, and pepper). Add the chopped green onion, ginger, and mackerel strips, and mix well.
Take 1/6 of the mixture and place it flat on a shiso leaf. Cover with another shiso leaf to form a sandwich. Repeat to make 6 pieces in total.
Heat salad oil in a frying pan to 170°C (340°F), ensuring the oil is about 2 cm deep. Fry the shiso sandwiches for 4–5 minutes until cooked through. Serve on a plate with a wedge of lemon.
