- 🧅 100g onion
- 10 shiso leaves
- 1.5 tbsp salad oil
Eggplant Salt Water
- 🧂 Salt as needed
Horse Mackerel Seasoning
- 🧂 A pinch of salt and pepper
- 1 tbsp potato starch
Nanban Sauce
- 3 tbsp concentrated soy sauce
- 3 tbsp vinegar
- 🍬 1/2 tbsp sugar
- A pinch of sliced chili
- 💧 100ml water
ÉTAPES
Slice the eggplant and soak it in salted water to remove excess moisture.
Season the horse mackerel fillets with salt and pepper, then coat them with potato starch.
Heat salad oil in a pan and pan-fry the horse mackerel fillets until golden brown.
In a separate bowl, mix soy sauce, vinegar, sugar, chili, and water to prepare the Nanban sauce.
Combine the fried horse mackerel, sliced onion, and eggplant in a dish, then pour the Nanban sauce over them.
Garnish with shiso leaves before serving.
