- 840g bamboo shoots (2-3 pieces)

ÉTAPES
Rinse the rice 1-2 times with water and set aside the rice water.
Wash the bamboo shoots thoroughly. Cut the tip diagonally and make a 1-2 cm incision along the side.
Place the bamboo shoots and chili pepper in a pot. Add the rice water until the bamboo shoots are submerged.
Heat the pot over medium heat until it boils, then reduce to medium-low heat. Cover with a drop lid and place chopsticks across the pot to hold the lid in place. Simmer for 1.5 to 2 hours until a skewer can easily pierce through.
Turn off the heat and let the bamboo shoots cool in the cooking liquid.
Peel off the outer layers of the bamboo shoots. Use a skewer or chopsticks to scrape off any rough spots. If the base is tough, trim it with a knife.
