- 20g soy-marinated salmon roe
- 2 whole yuzu

- 150g daikon radish, julienned
- 1/2 carrot, julienned
- 🍬 1 tbsp sugar
- 🧂 1/4 tsp salt
- 1/2 tbsp white sesame seeds
ÉTAPES
Julienne the daikon and carrot. Place them in a bowl, sprinkle with a pinch of salt, and let sit for 10 minutes. Squeeze out excess water.
Cut the yuzu horizontally about 1/3 from the top. Scoop out the pulp and juice using a spoon.
In a separate bowl, mix yuzu juice, sugar, salt, and sesame seeds. Add the daikon and carrot, then toss to combine.
Fill the hollowed-out yuzu skins with the namasu mixture and top with salmon roe.
