- 100g island shallots
- 1/2 bunch chives
Protein
- 🥚 1 egg
- 2 chikuwa
Seasoning
- 1 tsp soy sauce
- 🧂 Pinch of salt and pepper for eggs
- 🧂 Pinch of salt and pepper for stir-fry
Oil
- 1 tbsp salad oil
ÉTAPES
Wash the island shallots in water, rub gently to remove the thin skin, and cut off the stems and roots. Slice them in half lengthwise. Cut the chives into bite-sized pieces.
Slice the chikuwa diagonally into thin pieces.
Crack the egg into a bowl, add a pinch of salt and pepper, and mix well.
Heat half of the salad oil in a frying pan over medium heat. Add the egg and stir gently until semi-solid. Remove the egg from the pan.
Add the remaining salad oil to the pan and stir-fry the island shallots for 1 minute. Add the chikuwa, salt, pepper, and soy sauce, and stir-fry for another minute. Add the chives and cooked egg, then stir briefly to combine.
