- 🐟 140g horse mackerel fillets

- 🌿 8 fresh basil leaves

- 1 tbsp olive oil

- 🧂 A dash of salt and pepper
Egg Mixture
- 🥚 1 egg
- 🧀 2 tbsp grated Parmesan cheese
- 🧂 1/4 tsp salt

ÉTAPES
Chop the tomato roughly and mix it in a bowl with olive oil and a pinch of salt to create a fresh tomato sauce.
In a separate bowl, mix the egg, Parmesan cheese, and salt to prepare the egg mixture.
Season the horse mackerel fillets with salt and pepper, place basil leaves evenly on top, and lightly coat the fillets with flour.
Heat butter in a frying pan over medium heat. Dip the fillets into the egg mixture and fry them for 4–5 minutes on each side until golden brown.
