- 🐟 1 cleaned Pacific saury (110g)
Vegetables
- 🧄 1 clove garlic, minced
- 🌿 3 basil leaves, chopped
- 🍅 5 cherry tomatoes, halved
Seasoning
- 🧂 Pinch of salt
- Pinch of pepper
- 1 tsp mustard
Oil
- 2 tbsp olive oil
Flour
- 1 tbsp all-purpose flour
Garnish
- 🍋 1 wedge of lemon
ÉTAPES
Cut cherry tomatoes in half, chop basil leaves, and mince garlic.
Cut the Pacific saury in half, sprinkle with salt, let sit for 5 minutes, and pat dry. Coat lightly with flour.
Mix cherry tomatoes, olive oil, mustard, salt, and pepper in a bowl to make the tomato sauce.
Heat olive oil in a pan over low heat, sauté garlic until fragrant, then add Pacific saury and cook for 3–4 minutes per side.
Plate the cooked fish, drizzle with tomato sauce, sprinkle chopped basil, and serve with a wedge of lemon.
