INGRÉDIENTS
Noodles
- 1 pack cooked soba noodles
Fish
- 1 processed sardine (iwashi)
Vegetables
- 100g grated daikon
- 1 shiso leaf
Seasoning
- 1 tbsp potato starch
- 1 tbsp salad oil
- 3 tbsp concentrated mentsuyu
- 100cc water
- 1/2 tbsp soy sauce
- 1/2 tbsp mirin
- 1/2 tbsp sake
- Pinch of sansho pepper
ÉTAPES
Coat the sardine (iwashi) with potato starch. Grate the daikon and squeeze out excess water.
Heat salad oil in a frying pan over medium heat and cook the sardine (iwashi) on both sides. Once cooked, remove excess oil and add the seasoning ingredients (soy sauce, mirin, sake, sansho). Coat the iwashi evenly.
Rinse the soba noodles with water and drain well.
In a serving bowl, mix mentsuyu and water. Arrange the soba, sardine (iwashi), shiso leaf, and grated daikon on top. Serve and enjoy.
