- 1 tbsp mirin
- 1 tbsp miso
- 1 tbsp white sesame seeds

- 1 tbsp potato starch
- 1 tbsp salad oil
- 1 tbsp sake
ÉTAPES
Cut the stems off the shiso leaves and slice them in half lengthwise. Remove the pits from the umeboshi plums and mash them into a smooth paste.
Scale the iwashi fish by running the knife from the tail to the head. Cut off the head and remove the guts, cleaning thoroughly under running water.
Open the fish by running your thumb along the backbone, remove the bones, and cut each fish into halves lengthwise.
Mix the umeboshi paste with mirin, miso, and sesame seeds in a bowl to create the sesame miso sauce.
Place the fish skin-side down, add a shiso leaf and spread 1/12 of the sesame miso sauce on top. Roll tightly and secure with a toothpick. Repeat for all pieces and coat with potato starch.
Heat salad oil in a pan over medium heat. Place the rolls seam-side down and cook until browned. Add sake, cover, and steam on low heat for 3 minutes. Remove toothpicks and serve.
