INGRÉDIENTS
Fish
- 🐟 4 iwashi, cleaned (360g)
Vegetables
- 🥬 100g daikon, grated
- 1 piece ginger, grated
Coating
- 🌾 100g flour for coating
- 🥚 1 egg
- 💧 150ml cold water
Seasoning
- 🧂 Pinch of salt
Oil
- Enough salad oil for frying
Sauce
- 2 tbsp concentrated mentuyu
- 💧 60ml water
ÉTAPES
Peel and grate the daikon and ginger.
Pat the iwashi dry with paper towels and sprinkle with salt. Lightly coat both sides with flour.
In a bowl, beat the egg, add cold water, and mix well. Add flour and gently mix with chopsticks to make the batter.
Heat salad oil in a pot to 170°C. Dip the iwashi in the batter and fry for 1 minute. Flip and fry for another 2 minutes until crispy.
Mix mentuyu and water in a microwave-safe container, cover loosely, and heat in a microwave at 600W for 30 seconds.
Serve the iwashi tempura on a plate with grated daikon and ginger on the side.
