INGRÉDIENTS
Main
- 200g ground meat mix
- 🍆 1 medium eggplant (80g), diced
- 🧅 1/2 onion, minced
- 1/2 piece ginger, minced
- 1 green onion, chopped
- 1 tbsp vegetable oil
Meat Mixture
- 🥚 1 egg
- 🧂 1/4 tsp salt
- Pinch of pepper
- 4 tbsp breadcrumbs
Sauce
- 1 tbsp mirin
- 1 tbsp soy sauce
- 1/4 tsp dashi powder
- 💧 50ml water
Thickener
- 1 tsp cornstarch
- 💧 2 tsp water
ÉTAPES
Dice the eggplant into 1cm cubes, mince the onion and ginger.
Mix ground meat, onion, and meat mixture ingredients in a bowl until sticky. Add diced eggplant and mix well. Shape into two oval patties.
Heat vegetable oil in a pan over medium heat. Cook patties until browned, flip, cover, and steam on low heat for 7-8 minutes until cooked through.
In a saucepan, combine ginger and sauce ingredients. Bring to a boil, then add cornstarch slurry and stir until thickened.
Plate the patties, pour the sauce over, and garnish with chopped green onion.
