INGRÉDIENTS
Main Ingredients
- 1 can (400g) canned Pacific saury
- 1 thumb-sized piece of ginger
- 1 tbsp vegetable oil
- 2 green chilies
- 15 shishito peppers
- 2 red chilies
- A pinch of sesame seeds
Seasoning
- 1/3 cup soy sauce
- 1/3 cup water
- 1/3 cup mirin
- 2 tbsp sugar
ÉTAPES
Drain the canned Pacific saury and discard the liquid.
Slice the ginger into thin pieces and add to a pot along with 2 tbsp sugar.
Pour 1/3 cup soy sauce, 1/3 cup water, and 1/3 cup mirin into the pot. Mix well.
Add the drained saury to the pot and bring to a boil.
Add 1 tbsp vegetable oil to the pot for a glossy finish.
Slice 2 green chilies and add them to the pot. Simmer until the sauce reduces by half.
Cut 15 shishito peppers in half and add them to the pot.
Slice 2 red chilies and add them for color and flavor. Continue simmering.
Simmer until the sauce is almost fully reduced. Sprinkle sesame seeds before serving.
