INGRÉDIENTS
Seafood
- 🐙 200g octopus, cut into bite-sized pieces
- 🦪 100g shelled clams
Vegetables
- 100g chopped lotus root
- 🧅 1/2 onion, roughly chopped
- 1 pack shimeji mushrooms
- Chopped green onions, as needed
Grains
- 🍚 3 cups uncooked rice
Oil
- 1 tbsp salad oil
Seasoning
- 30g salted kombu
- 💧 600ml water
- 2 tbsp soy sauce
- 2 tbsp sake
- 2 tbsp mirin
- 🧈 10g salted butter
ÉTAPES
Cut the octopus into bite-sized pieces. Roughly chop the lotus root and onion. Separate the shimeji mushrooms into small clusters.
Heat salad oil in a frying pan and sauté the onion until softened.
Add the rice and stir until it becomes translucent.
Add the octopus, clams, lotus root, and shimeji mushrooms. Stir until all ingredients are slightly softened.
Pour in the seasoning mixture (salted kombu, water, soy sauce, sake, mirin, and butter) and mix well.
Cover the pan and cook over medium-high heat until boiling. Stir, then reduce to low heat and cook for 15 minutes.
Turn off the heat and let the dish steam with the lid on for 7 minutes. Serve on plates and garnish with chopped green onions.
