INGRÉDIENTS
Base
- 🍚 400g cooked rice
Chicken
- 🍗 1 piece chicken thigh (250g)
- Potato starch, as needed
- Salad oil, as needed
Vegetables
- 🥬 100g shredded cabbage
- 🧅 2 stalks chopped green onion
Seasoning
- 2 tsp sake
- 1 tsp soy sauce
- 1/2 tsp grated ginger
Onion Miso Sauce
- 🧅 1/4 onion, thinly sliced
- 2 tbsp miso
- 1 tbsp sake
- 2 tbsp mirin
- 1 tbsp white sesame seeds
- 1 tsp sesame oil
ÉTAPES
Cut the chicken thigh into bite-sized pieces. In a bowl, mix the chicken with sake, soy sauce, and grated ginger. Massage well.
Shred the cabbage and thinly slice the onion.
Heat sesame oil in a frying pan over medium heat. Stir-fry the onion until softened. Add the remaining miso sauce ingredients and mix well. Bring to a boil and remove from heat.
Wipe the frying pan clean. Add salad oil to about 1cm depth and heat over medium. Coat the chicken pieces in potato starch and fry until golden and cooked through. Remove from the pan.
Serve rice in a bowl, top with shredded cabbage, fried chicken, and onion miso sauce. Garnish with chopped green onion.
