- 2 fillets flounder
- 🧅 1/2 onion, sliced
- 🥕 30g carrot, julienned
- 2 bell peppers, sliced
- 🧂 Pinch of salt and pepper
- Cornstarch as needed
- Vegetable oil as needed
- 💧 100cc water
Sauce
- 1/2 tsp dashi powder
- 1 1/2 tbsp soy sauce
- 1 1/2 tbsp vinegar
- 🍬 1 tbsp sugar
- 1 tbsp mirin
- 1 tbsp sake
- 1 1/2 tsp cornstarch
- 💧 1 1/2 tsp water
ÉTAPES
Season flounder fillets with salt and pepper, coat with cornstarch, and deep-fry at 170°C until crispy.
Slice the onion thinly, julienne the carrot, and slice the bell peppers.
Mix cornstarch and water to create a slurry.
Add water to a pot, cook onion and carrot until the onion softens. Add dashi powder, soy sauce, vinegar, sugar, mirin, sake, and bell peppers.
Add the cornstarch slurry to thicken the sauce. Pour the sauce over the fried flounder and serve.
