INGRÉDIENTS
Protein
- 2 fried pork cutlets (280g)
- 🥚 2 beaten eggs
Vegetables
- 🧅 1/2 onion (100g), sliced
- A small amount of mitsuba
Seasonings
- 1 1/2 tbsp mirin
- 1 1/2 tbsp soy sauce
- 1/4 tsp Japanese dashi powder
- 💧 100ml water
ÉTAPES
Slice the pork cutlets into 2cm widths. Slice the onion into 5mm widths. Cut the mitsuba into bite-sized pieces.
In a frying pan, combine the seasonings (mirin, soy sauce, dashi powder, and water) and heat over medium heat until boiling. Add the onion, cover, and simmer on low heat for 2–3 minutes.
Arrange the pork cutlets in the pan and bring to a boil again. Pour the beaten eggs evenly over the mixture, cover, and simmer on low heat for about 1 minute until the eggs reach your preferred consistency. Serve on a plate and garnish with mitsuba.
