INGRÉDIENTS
Vegetables
- 1 bunch of komatsuna
- 🥕 4 cm carrot, julienned
- 🧅 1/3 stalk green onion, minced
Broth
- 200 ml water
- 1/3 tsp Japanese dashi powder
Meat Mixture
- 100 g ground chicken
- 1 tbsp sake
- 1/2 tsp soy sauce
- 2 tsp potato starch
- 1 tsp grated ginger
Soy Milk Soup
- 200 ml soy milk
- 2 tsp miso
- 🧂 1/3 tsp salt
ÉTAPES
Separate komatsuna stems and leaves, cut into 4 cm pieces. Julienne the carrot and mince the green onion.
In a bowl, mix the meat mixture ingredients (ground chicken, sake, soy sauce, potato starch, ginger, and green onion) until sticky. Divide into 6 portions and shape into balls.
In a pot, add water, dashi powder, carrot, and komatsuna stems. Heat over medium heat until boiling, then add the meatballs. Skim off any foam and cover to simmer on low heat for 6 minutes.
Add soy milk, miso, salt, and komatsuna leaves to the pot. Heat over medium heat until the soy milk is warmed through.
