- 🥚 2 eggs
Seasoning
- 30cc concentrated mentuyu
- 💧 90cc water
ÉTAPES
Cut the root off the komatsuna and chop into 4cm pieces, separating stems and leaves. Crack eggs into a bowl and beat well.
Heat mentuyu and water in a frying pan over medium heat. Once boiling, add komatsuna stems and simmer briefly. Add komatsuna leaves and shirasu, spreading them evenly, then cover and simmer on low heat for 2 minutes until the leaves soften.
Pour the beaten eggs evenly into the pan, cover again, and cook for 1 minute. Turn off the heat and let it sit for 1 minute to finish cooking with residual heat.
