Trim the root of the komatsuna and make cross cuts. Wash thoroughly and drain. Julienne the ginger and soak it in water, then drain.

Boil water in a pot, add a pinch of salt, and blanch the komatsuna in two batches. Cool in water, squeeze out excess moisture, and cut into 3–4 cm pieces.

Combine the seasoning ingredients (water, mirin, soy sauce, dashi powder) in a microwave-safe container. Heat uncovered at 600W for 30 seconds and let cool.

Soak the komatsuna in the cooled seasoning mixture for about 10 minutes.

Plate the komatsuna, top with dried shirasu and julienned ginger.
