    • 1 tbsp mirin
    • 2 tbsp mentsuyu (3x concentrated)
    • 💧 100 ml water

Cut the roots off the komatsuna and slice into 4 cm lengths. Julienne the carrot and slice the aburaage. Drain the tuna.

Heat salad oil in a pan over medium heat and stir-fry the carrot.

Add the komatsuna stems, aburaage, and tuna to the pan and continue stir-frying over medium heat.

Once the komatsuna stems soften, add the komatsuna leaves and the seasoning mixture (sugar, mirin, mentsuyu, and water). Simmer over medium heat until the liquid reduces.
