INGRÉDIENTS
Wrapper
- 20 large dumpling wrappers
Filling
- 70g ground pork
- 100g chopped komatsuna
- 🧅 1/2 stalk minced green onion
- 2 tbsp dried shrimp
Soup
- 100cc hot water
- 1/2 tbsp chicken stock powder
- 5g powdered gelatin
Seasoning
- 1 tbsp sake
- 🧂 1/3 tsp salt
- Pinch of pepper
Thickener
- 1/2 tbsp cornstarch
- 1 tbsp water
Garnish
- Sliced ginger as needed
ÉTAPES
Mix soup ingredients in a heatproof container and refrigerate for at least 1 hour until set.
Boil water in a pot and blanch komatsuna until vibrant green. Cool in water and chop finely. Mince the green onion.
Combine ground pork, komatsuna, green onion, dried shrimp, and seasonings in a bowl. Mix until sticky.
Place filling and soup gel in the center of each dumpling wrapper. Apply cornstarch mixture to the edges, fold, and pleat to seal. Repeat for 20 dumplings.
Arrange dumplings on a steamer lined with parchment paper, leaving space between each. Steam for 7 minutes over boiling water.
Serve hot with sliced ginger as garnish.
