- 20g dried kombu

ÉTAPES
Wipe the dried kombu with a damp cloth to clean it. Place it in a tray with vinegar and water, letting it soak for about 10 minutes until softened. Drain the kombu.
In another tray, lay half of the kombu and sprinkle half of the salt (1/6 tsp) evenly. Arrange the yellowtail slices without overlapping, sprinkle the remaining salt (1/6 tsp), and cover with the remaining kombu. Wrap tightly with plastic wrap and place a weight on top. Refrigerate for about 3 hours.
