INGRÉDIENTS
Vegetable
- 120g daikon, sliced thinly
- Potato starch, as needed
Seasoning
- 1 tbsp sake
Meat Mixture
- 100g ground chicken
- 1 piece hanpen (60g)
- 🧅 1 tbsp chopped green onion
- 1 tbsp sake
- 🧂 1/3 tsp salt
- Pepper, a pinch
Ponzu Sauce
- 1 tbsp ponzu sauce
- 1 tsp sesame oil
ÉTAPES
Slice daikon into 12 thin pieces and pat dry with paper towels. Coat with potato starch.
In a bowl, tear hanpen into small pieces and mix with the remaining meat mixture ingredients until sticky.
Layer daikon (1 slice), meat mixture (1/9 portion), and repeat for 3 layers, finishing with daikon on top. Make 3 stacks. Sprinkle sake and cover loosely with plastic wrap. Microwave at 600W for 5–7 minutes.
Mix ponzu sauce and sesame oil in a bowl to prepare the sauce.
Plate the steamed daikon stacks and drizzle with ponzu sauce.
