INGRÉDIENTS
Main
- 120g lotus root, thinly sliced
- 1 tbsp potato starch
- 1 tbsp salad oil
Meat Mixture
- 200g ground chicken
- 4 pickled plums, chopped
- 1 tbsp sake
- 1 tbsp potato starch
- Pinch of salt and pepper
Teriyaki Sauce
- 1 tbsp mirin
- 1/2 tbsp soy sauce
- 1 tbsp water
- 1 pickled plum, mashed
Garnish
- 2 shiso leaves, thinly sliced
ÉTAPES
Slice lotus root into 3mm thin slices, soak in water, drain, and coat with potato starch. Chop pickled plums and mash the plum for the sauce. Thinly slice shiso leaves.
Mix all meat mixture ingredients in a bowl until sticky and well combined.
Place meat mixture on half of the lotus root slices, then cover with the remaining slices. Press meat into the holes of the lotus root for better adhesion.
Heat salad oil in a frying pan over medium heat. Cook the lotus root sandwiches until golden brown on one side, then flip, cover, and cook on low heat until fully cooked.
Add teriyaki sauce ingredients to the pan and coat the lotus root sandwiches evenly.
Plate the lotus root sandwiches and garnish with sliced shiso leaves.
