INGRÉDIENTS
Main Ingredients
- 150g ground chicken
- 200g lotus root
- 5 shiso leaves
- 1 tbsp salad oil
- potato starch as needed
Seasoning for Filling
- 25g spicy cod roe
- 1 tbsp sake
- 1 tsp soy sauce
- a pinch of salt and pepper
- 1/2 tbsp potato starch
ÉTAPES
Slice lotus root into 5mm thick pieces, prepare 12 slices, soak in water, and drain. Remove stems from shiso leaves and chop them.
Cut open the spicy cod roe and extract the contents.
In a bowl, mix ground chicken with the seasoning ingredients until sticky. Add chopped shiso leaves and mix further.
Lightly coat lotus root slices with potato starch. Place 1/6 of the chicken mixture on one slice, cover with another slice, and press lightly to shape. Repeat to make 6 pieces.
Heat salad oil in a frying pan over medium heat. Place the prepared lotus root sandwiches in the pan and cook until browned. Flip, add 1 tbsp water, cover, and steam over low heat for 5 minutes. Remove the lid and evaporate any remaining water.
