- 🍚 2 bowls (400g) cooked rice
- 🐟 200g sashimi-grade tuna
Zuke Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 2 tbsp soy sauce
Sushi Vinegar
- 🍬 1 tbsp sugar
- 🧂 1/2 tsp salt
- 2 tbsp vinegar
Toppings
- 2 shiso leaves, thinly sliced
- 🌰 To taste toasted sesame seeds
ÉTAPES
In a microwave-safe container, combine sake and mirin. Heat uncovered at 600W for 30–40 seconds. Add soy sauce, mix, and let cool to make the zuke sauce.
In a bowl, gently mix tuna with the zuke sauce. Cover with cling wrap pressed directly onto the surface and refrigerate for 20–30 minutes, flipping the tuna halfway through.
Slice shiso leaves thinly and set aside.
In a bowl, combine sugar, salt, and vinegar to make sushi vinegar. Mix well.
Mix cooked rice with sushi vinegar using a cutting motion to avoid crushing the grains.
Plate the sushi rice in a bowl, arrange marinated tuna slices in a circular pattern, top with shiso leaves, and sprinkle sesame seeds.
