INGRÉDIENTS
Base
- 🍚 2 bowls cooked rice (400g)
Protein
- 🐖 150g ground pork
- 🥚 2 beaten eggs
Vegetables
- 🍄 200g enoki mushrooms
- 🧅 Chopped green onions, as needed
Oil
- 2 tbsp sesame oil
Seasoning
- 1 tbsp sake
- 2 tsp soy sauce
- 1 tsp doubanjiang
- 1.5 tbsp ketchup
- 1/2 tsp grated ginger
- 1 tbsp cornstarch
- 150ml water
ÉTAPES
Cut the root off the enoki mushrooms and slice them into thirds. Mix all the seasoning ingredients in a bowl.
Heat 1 tbsp sesame oil in a frying pan over medium heat. Add the beaten eggs and stir until they become a soft scramble. Remove from the pan.
Wipe the pan clean and heat the remaining 1 tbsp sesame oil. Add the ground pork and stir-fry over medium heat until the color changes. Add the enoki mushrooms and stir-fry until softened.
Add the mixed seasoning ingredients to the pan and stir until the sauce thickens. Return the scrambled eggs to the pan and mix briefly.
Serve the cooked rice in bowls, top with the mapo egg mixture, and garnish with chopped green onions.
