INGRÉDIENTS
Fish
- 8 mehikari fish (240g)
Vegetables
- 🧅 1/4 onion, thinly sliced
- 🥕 1/4 carrot, julienned
- 🥒 1/2 cucumber, julienned
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp potato starch
- Enough salad oil for frying
Sauce
- 🍬 1 tbsp sugar
- 4 tbsp vinegar
- 3 tbsp soy sauce
- 1 tsp sliced chili
- 💧 150ml water
ÉTAPES
Thinly slice the onion. Julienne the carrot and cucumber.
Mix the sauce ingredients (sugar, vinegar, soy sauce, chili, water) in a bowl and add the sliced vegetables.
Prepare the mehikari fish by removing scales, cutting off the head, and cleaning the insides. Pat dry and season with salt and pepper. Coat with potato starch.
Heat salad oil to 170°C in a pot. Fry the mehikari until cooked through and crispy.
While still hot, add the fried mehikari to the sauce mixture and let it marinate for 15 minutes.
