INGRÉDIENTS
Dough
- 180g bread flour
- 30g cake flour
- 🧂 1 tsp salt
- 🧂 A pinch of sugar
- 1/2 tsp dry yeast
- 💧 130cc lukewarm water
Toppings
- 50g mentaiko
- 3 tbsp mayonnaise
- 🥔 150g potato
- 50g mochi
- To taste pizza cheese
- To taste olive oil
- To taste shredded nori
ÉTAPES
Mix sugar, dry yeast, and lukewarm water in a bowl until dissolved.
Combine bread flour, cake flour, and salt in another bowl. Add the yeast mixture and knead for 10 minutes until smooth. Divide into two balls.
Place the dough balls in a container, cover, and let rise at 40°C for 35–40 minutes until doubled in size.
Prepare toppings: extract mentaiko, slice potato thinly, soak in water for 5 minutes, and cut mochi into 2cm cubes.
Mix mentaiko and mayonnaise to create mentaiko mayo sauce. Microwave potatoes for 3 minutes at 600W.
Flatten each dough ball into a round shape, leaving the edges thicker.
Place dough on a baking sheet, drizzle olive oil, and spread evenly. Add mentaiko mayo sauce, potatoes, mochi, and pizza cheese.
Bake in a preheated oven at 200°C for 15–20 minutes until golden brown. Sprinkle shredded nori before serving.
