INGRÉDIENTS
Noodles
- 2 packs frozen udon
Seafood
- 1 piece mentaiko (50g)
Egg
- 🥚 1 egg
Vegetables
- Mitsuba, as needed
Seasoning
- 1 tbsp mirin
- 🧂 1/2 tsp salt
- 1 tsp soy sauce
- 1/2 tsp dashi powder
- 1/2 tsp grated ginger
- 💧 600ml water
Thickener
- 1 tbsp potato starch
- 💧 1 tbsp water
ÉTAPES
Cut open the mentaiko and remove the contents. Trim the mitsuba roots and cut into 2cm pieces.
Beat the egg in a bowl until smooth. Place the udon on a microwave-safe plate, cover with plastic wrap, and heat according to package instructions.
In a pot, combine the seasoning ingredients and heat over medium heat. Once boiling, add the potato starch mixture and stir until thickened.
Add half of the mentaiko to the sauce and mix. Gradually pour in the beaten egg, stirring gently until semi-cooked, then turn off the heat.
Place the udon in a bowl, pour the sauce over it, and top with mitsuba and the remaining mentaiko.
