INGRÉDIENTS
Fish
- 4 fillets sardine
Vegetables
- 🧅 1/4 onion, sliced
- 🍄 4 mushrooms, sliced
- 🍅 2 cherry tomatoes, quartered
- 4 black olives, sliced
Pastry
- 2 frozen pastry sheets (10cm x 18cm)
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp salad oil for vegetables
- 1 tsp salad oil for sardines
Quiche Mixture
- 🥚 2 eggs
- 🧂 1/3 tsp salt
- 🧂 Pinch of pepper
- 🧀 1 tbsp grated cheese
- 🥛 100ml milk
ÉTAPES
Cut sardines into 4 pieces, season with salt and pepper, let sit for 5 minutes, then pat dry.
Slice onion and mushrooms thinly, quarter cherry tomatoes, and slice black olives.
Cut frozen pastry sheets in half, lightly roll out, and place into greased ramekins lined with parchment paper.
Heat salad oil in a pan, sauté onion and mushrooms with a pinch of salt until softened, then remove.
Add salad oil to the pan and sear sardines on both sides until lightly browned.
In a bowl, whisk eggs, add salt, pepper, grated cheese, and milk, then mix in cooled sautéed vegetables, sardines, and olives.
Pour mixture into ramekins, top with 2 cherry tomato quarters each, bake at 200°C for 15 minutes, then reduce to 180°C and bake for another 15 minutes.
