- 🐟 8 horse mackerel (300g), butterflied
Seasoning
- 🧂 A pinch of salt
- 2 tbsp mirin
- 2 tbsp soy sauce
- 🌰 White sesame seeds, as needed
ÉTAPES
Arrange the butterflied horse mackerel on a tray and sprinkle with a pinch of salt. Let sit for 10 minutes, then rinse with water and pat dry with paper towels. Arrange them again on the tray without overlapping.
Mix mirin and soy sauce, then pour over the fish. Cover tightly with plastic wrap and refrigerate for about 3 hours to marinate.
Remove the fish from the marinade and pat dry with paper towels. Spread them out on a drying rack without overlapping, sprinkle white sesame seeds over the fish, and sun-dry until the surface is no longer sticky.
