INGRÉDIENTS
Fish
- 🐟 2 fillets mackerel
Vegetables
- 1 piece ginger, sliced
- 🧅 1 stalk green onion, cut into 4-5 cm pieces
Condiments
- 🧈 Butter, as needed
Seasonings
- 💧 300 ml water
- 150 ml sake
- 3 tbsp miso
- 🍬 3 tbsp sugar
- 2 tbsp white dashi
- 1 tsp dashi powder
ÉTAPES
Make shallow cross cuts on the skin side of the mackerel. Boil water in a pot, turn off the heat, and place the mackerel in for 1 minute. Remove and pat dry.
Slice the ginger thinly and cut the green onion into 4-5 cm pieces.
In a deep frying pan, add the mackerel, ginger, green onion, and all ☆ seasonings. Heat over medium until it comes to a boil.
Cover with aluminum foil as a drop lid, reduce heat, and simmer for about 5 minutes.
Remove the mackerel and green onion, and plate them.
Add butter to the remaining sauce in the pan and simmer until slightly thickened. Pour over the mackerel.
