    • 1/2 tsp grated garlic
    • 1 tsp grated ginger
    • 1 tbsp cornstarch
  • Dipping Sauce

    • Vinegar, as needed
    • Soy sauce, as needed
    • Chili oil, as needed

Mince the cabbage and chives.

In a bowl, flake the mackerel from the cans. Add minced cabbage, chives, and the seasoning ingredients (sake, garlic, ginger, cornstarch). Mix well.

Heat half of the sesame oil (1 tbsp) in a rectangular frying pan. Line half of the dumpling wrappers along the bottom and sides of the pan. Spread the mackerel mixture evenly over the wrappers, then cover with the remaining wrappers. Cover with aluminum foil and cook on low heat for about 10 minutes until golden brown.

Flip the dumplings onto a plate, then return them to the pan. Add water around the edges of the pan, cover, and steam for 3 minutes. Remove the lid, increase to medium heat, and evaporate excess water. Add the remaining sesame oil (1 tbsp) around the edges and fry until crispy.

Cut into bite-sized pieces, plate, and serve with dipping sauce (vinegar, soy sauce, chili oil) as desired.
