    • 2 tbsp mirin
    • 🧂 1/4 tsp salt
    • 1 tsp soy sauce
    • 1/3 tsp Japanese dashi powder
    • 💧 300ml water

Cut the mitsuba into bite-sized pieces and clean the clams by scrubbing their shells. Drain the clams.

Add the seasonings (☆) to a pot and heat over medium heat. Once boiling, add the clams and cover the pot. Cook on low heat for about 5 minutes until the shells open, then remove the clams.

Add the udon noodles to the pot and simmer until softened. Return the clams to the pot and heat until boiling. Serve in a bowl and garnish with mitsuba.
