Mushrooms
- 🍄 150g shiitake mushrooms
- 🍄 1 king oyster mushroom
- 🍄 2 handfuls enoki mushrooms
Broth
- 5 cups anchovy kelp broth
Powders
- 10 tbsp fine perilla powder
- 3 tbsp glutinous rice powder
Vegetables
- 🧅 1/4 onion, sliced
- 🧅 1/2 green onion, sliced
Seasonings
- 🧄 2/3 tbsp minced garlic
- 3 tbsp soy sauce
- 🧂 1/3 tbsp salt
ÉTAPES
Slice shiitake mushrooms, cut king oyster mushroom into pieces, and tear enoki mushrooms into strips. Blanch them briefly in boiling water, then rinse under cold water and squeeze out excess moisture.
Mix perilla powder and glutinous rice powder with 1 cup of water until smooth.
Slice onion and green onion. Prepare minced garlic.
In a pot, combine blanched mushrooms, sliced onion, minced garlic, soy sauce, and anchovy kelp broth. Bring to a boil over high heat.
Add the perilla and glutinous rice mixture to the boiling soup. Stir continuously for 5 minutes until thickened. Add green onion and season with salt.
