Meat
- 150g ground pork
Vegetables
- 10 cm (250g) nagaimo, peeled and sliced
- 1/3 bunch (35g) chives, chopped
- 5 cm white part of green onion, minced
- 4 slices ginger, minced
Seasonings
- 1/2 tbsp potato starch
- 1 tbsp sesame oil
- 1 tbsp sake
- 1 tsp mirin
- 1/2 tbsp soy sauce
- 1 tbsp miso
- A pinch of pepper
ÉTAPES
Peel the nagaimo and slice it into 10 pieces, each about 1 cm thick. Chop the chives, and mince the green onion and ginger.
In a plastic bag, mix the ground pork, chives, green onion, ginger, and all the ☆ seasonings to create the meat mixture.
Dust one side of each nagaimo slice with potato starch. Cut a small corner off the plastic bag and pipe the meat mixture onto the starch-dusted side of each nagaimo slice.
Heat sesame oil in a frying pan over medium heat. Place the nagaimo slices meat-side up and cook for about 2 minutes until the bottom is golden brown. Add 3 tbsp of water, cover, and steam over low heat for 5–6 minutes until the meat is cooked through.
