INGRÉDIENTS
Vegetables
- 🥔 200g new potatoes
- 🧅 1/4 onion, thinly sliced
Dairy
- 🧈 10g salted butter
- 🥛 200cc milk
Liquids
- 💧 200cc water
Seasonings
- 1 tsp consomme
- 🧂 1/3 tsp salt
- A pinch of pepper
- 🌿 Chopped parsley, as needed
ÉTAPES
Wash the new potatoes thoroughly, cut them in half with the skin on, and soak in water. Drain the water. Thinly slice the onion against the grain.
Heat butter in a pot over low heat, add the onion, and sauté until translucent.
Add the new potatoes to the pot and stir briefly. Add water and consomme, cover with a lid, and simmer over low heat for 20 minutes.
Roughly mash the new potatoes in the pot, then add milk, salt, and pepper. Heat gently until warmed through. Serve in bowls and garnish with parsley.
