Main
- 🍚 2 bowls cooked rice (400g)
- 🍗 1 chicken thigh (250g)
- 🧅 1/2 onion, sliced
Coating
- 🍞 2 tbsp breadcrumbs
- 🥚 2 eggs, beaten
Seasoning
- 1 tbsp vegetable oil
- 🧂 Pinch of salt and pepper
- 🍬 2 tbsp sugar
- 2 tbsp mirin
- 2 tbsp soy sauce
- 💧 4 tbsp water
ÉTAPES
Slice the onion into wedges and cut the chicken thigh into bite-sized pieces.
Toast breadcrumbs in a pan over low heat until golden brown.
Remove breadcrumbs and heat vegetable oil in the pan. Add chicken and cook over medium heat, seasoning with salt and pepper.
Cover the pan and steam the chicken for 2 minutes until cooked through. Add onion and seasoning ingredients (sugar, mirin, soy sauce, water) and simmer for 3 minutes.
Pour 2/3 of the beaten eggs into the pan, cover, and cook on low heat for 2 minutes.
Add the remaining beaten eggs, cover, and cook for 15 seconds on low heat.
Serve the cooked mixture over bowls of rice and sprinkle toasted breadcrumbs on top.
